All diesen Anforderungen genügt der gute alte “Haferschleim” – auch wenn das wirklich kein schönes Wort ist – wenn man ihn veganisiert und etwas aufpeppt!

Wenn Ihr die Rubrik “Gut Versorgt?!” gelesen habt, ist Euch sicherlich aufgefallen, dass dieser Morgenbrei eigentlich in jedem Abschnitt auftaucht. Er ist wirklich ein absoluter Alleskönner: Proteine, Eisen, Kalzium, Folsäure, Omega-3-Fettsäuren…

Das schöne ist: man kann ihn unendlich varriieren, je nach Saison, Geschmack und Laune.

Hier das Grundrezept für eine Portion:

30g Haferflocken
10g Hirseflocken (wenn nicht vorhanden, einfach durch Haferflocken ersetzen)

1EL frisch gemahlene Chiasamen
1TL frisch gemahlene Leinsamen
Milch nach Geschmack und Bedarf

Hafer- und Hirseflocken vermischen, gerade eben mit kaltem Wasser bedecken und am besten über Nacht quellen lassen. Für die schnelle Variante kann man ihn aber auch direkt aufkochen.

Ansonsten am nächsten Morgen mit gewünschter Milch (wir nehmen am liebsten Hafermilch, selbstgemachte eignet sich gut, gekaufte hier lieber meiden) cremig rühren und kurz kochen lassen, bis die Hirse weich ist. Bei Bedarf immer noch ein wenig Milch nachgeben, bis es die gewünschte Konsistenz hat. Nun die frisch geschroteten Samen untergeben. So sind die wertvollen Fettsäuren verfügbar und nicht durch Hitze zerstört.

Hier die möglichen Extras:

Meine Kinder lieben Himbeeren und Blaubeeren im Frühstücksbrei. Da wir die meist in gefrorener Form vorrätig haben, rühre ich sie beim Kochen direkt in den Brei. Davon wird er schön rosa.

Eine heiß geliebte Kombi ist auch Himbeere mit Bananen. Aber auch Äpfel kann man eigentlich jeden Morgen auf unserem Brei finden. Birnen, Kiwis oder Pfirsiche je nach Saison, hüpfen ebenfalls gern in die Schüssel.

Dazu gibt es einen Schwung gepopptes Amaranth, für die extra Portion Eiweiß und Eisen. Und nach Belieben auch noch extra Chiasamen.

Kakaonibs und Gojis sind auch gern gesehener Gäste.

Walweise noch zerkleinerte Walnüsse, Blütenpollen oder etwas Zimt.

Bei uns stehen einfach alle Toppings auf dem Tisch und jeder nimmt sich, worauf er Lust hat. So sieht das gleiche Frühstück jeden Morgen und in jeder Schüssel ein wenig anders aus… Aber immer wieder so köstlich, dass ich jeden Tag ein neues Foto machen könnte!

Und hier noch mein absoluter Geheimtipp: Cacao Paste, auf deutsch auch Kakaomasse genannt (auf dem Bild rechts neben dem Amaranth). Das ist eine gemahlene Paste aus Kakaobohnen in Drop-Form, natürlich zuckerfrei. Und das tolle daran, im Gegensatz zu Kakaonibs, schmelzen sie im warmen Brei! Schokolade zum Frühstück – Himmlisch!

Man kann sie sogar in Rohkostqualität bekommen.

Wer mag, kann auch noch einen Löffel Kokosmus unterrühren. Das schmeckt köstlich und man hat auch gleich noch die guten rohen gesättigten Fettsäuren.

Und zu guter Letzt wird das Ganze noch mit einem Schluck warmer, aufgeschäumter Erdmandelmilch oder Mandelmilch übergossen.

Und wenn man den Luxus perfekt machen will, kann man noch gekeimtes Buchweizengranola oder getrocknete Buchweizenkeimlinge drüberkrümeln. Damit wird der Brei zur absoluten Närstoffbombe.

So seid Ihr rundum gut versorgt und werdet nie wieder etwas anderes Frühstücken wollen! Wohlig warm, so sollte sie sein, die erste Mahlzeit am Tag. Und nahrhaft. Und natürlich gut schmecken!

Tipp: Bereitet die Mischung der Flocken und Samen einfach schon in größeren Mengen vor und füllt sie in ein Vorratsglas. Dann könnt Ihr Euch in den schlaftrunkenen Morgenstunden leichter daraus bedienen.

Theh first meal of the day:  you want it to be cosy and warm. And nourishing. And obviously tasty!

Good old porridge meets all these requirements – if you veganise it and spice it up a little!

If you have read the section “well nourished?!” you will have noticed this bowl appearing in every paragraph. It’s an allround-talent: protein, iron, calcium, folic acid, omega-3’s…

The best thing about it: you can have an endless amount of different versions, according to season, taste and mood.

The baisc recipe for 1 person:

30g rolled oats

10g millet flakes (if not available, just substitute with oats)

1Tbsp. chia seeds

1tsp. ground linseed (ground it yourself)

Milk according to taste and liking

Mix all dry ingredients, just about cover with cold water and best let it soak over night. In that case chia and linseed will have even more power in aiding your digestion. (For the quick version you can also heat it up right away.)

In the morning, add your favourite milk (we use oat milk, home-made version, it’s best to stay away from industrial ones for cooking because of high sugar content) until you have a creamy texture and boil briefly, until the millet flakes have turned soft. If needed, add more milk as you go…

And now your possible extras:

My kids love raspberries and blueberries in their porridge. We usually have frozen ones so I add them right to the pot. This makes the whole thing look nice and pink.

Raspberries and banana is another dearly beloved combination. But you can also find apples in our bowls most mornigns. Pears, kiwis or peaches, strawberries depending on season, also like to jump in. Just add your favourite seasonal fruit and you can’t go wrong!

Now a dash of puffed amaranth to boost your protein and iron intake. And sometimes even extra chia seeds.

Cacao nibs and gojis are also very welcome guests. More options would include walnuts or a dash of cinnamon.

We simply put all the toppings onto the table and everyone creates their own customised version. This way, the same breakfast looks different every morning in every bowl… but precious every time. I could take a picture every single morning!

And now my secret ingredient: Cacao Paste. They are little drops made 100% from cacao beans (the ones at 2 o’clcok on the picture), so completely sugar free. But the great thing about them: they melt in your warm porridge! Chocolate for breakfast – heaven!

If you fancy it you can also add a spoonful of cocnut butter. It tastes amazing and and you get a good share of your healthy fats.

Last but not least, add a bit of warm, frothed tigernut milk or almond milk.

And if you want the complet luxury package, crumble the sprouted buckwheat granola ontop. This will turn your morning bowl into nutritional powerhouse!

Now you’re well nourished for the day. You will never want to have something else for breakfast again!

Tip: Mix large amounts of flakes and seeds and keep in a jar. This way it’s easier to prepare everything in the morning with your eyes still half-closed…
