Cremiges Kürbis-Risotto | Creamy butternut-squash-risotto

Sie ist da! Nein, ich meine nicht die Erkältungszeit. Auch wenn es gerade so gut wie jeden, den wir kennen, dahingerafft hat.
Ich spreche von der Kürbiszeit! Köstlich, diese riesigen Gesellen. Ob Butterkürbis oder Hokkaido, als Suppe oder gebacken … sie schmecken eigentlich immer.
In dieser Variante bildet ein Butterkürkis die Grundlage für ein herrlich cremiges Risotto – von meinen Kindern auch liebevoll “gelber Reis” genannt. Dazu passen hervorragend ein paar Pilze oder Zucchini – und das bunte Herbstgericht ist komplett.
Also, schon mal den Backofen vorheizen und los geht’s:

Für 4-6 Portionen
1 Butterkürbis (oder auch Euer Lieblingskürbis)
1 große Stange Lauch
1 kleine Zwiebel
1 große Zehe Knoblauch
2 Äpfel
2 EL (zuckerfreie) Gemüsebrühe
1 Kapsel Kardamom
1 TL Apfelessig
Salz
Pfeffer
3 EL Hefeflocken
mildes Kokosfett (neutral)

500g Vollkorn Risotto-Reis oder Vollkorn Rundkorn-Reis

Champignons, Zucchini, Rucola zum Verzieren
geschälte Hanfsamen für den letzten Schliff

Kocht den Reis in genügend Salzwasser ca 10 Minuten kürzer als angegeben.
Währendessen schält den Butterkürbis und schneidet ihn in kleine Streifen. Auch Lauch, Zwiebeln, Äpfel und Knofi werden kleingeschnitten. Auf einem großen Backblech 2 EL Kokosfett schmelzen lassen. Das Gemüse gut damit vermengen, mit Salz und Pfeffer bestreuen und ca 40 min bei 180° im Ofen knusprig backen.

Wenn das Gemüse schön angeröstet ist, füllt ca 2/3 davon in einen Mixer. Gebt Wasser (bis ca. 2cm unter die Füllhöhe des Inhalts) sowie  Apfelessig, Kardamom und Gemüsebrühe hinzu. Gründlich durchmixen und ggf. mit Salz und Pfeffer abschmecken.
Nun gebt die Gemüsesuppe und das restliche Ofengemüse zu dem fast fertigen Reis und lasst das ganze ca 10 Minuten weiterköcheln bis der Reis weich ist. Mit Hefeflocken, Salz und Pfeffer abschmecken.
Anschließend könnt Ihr Euch noch ein paar Zucchini oder Pilze kurz anbraten und das alles mit etwas Rucola und Hansfsamen servieren. Fertig ist das perfekte Herbstgericht!


Creamy butternut-squash-risotto

Squash-season is finally here! Simply delicious, these friendly looking giants. Butternut or Hokkaido, as soup or grilled in the oven … they are always so tasty.
In this version, a buttnernut squash makes a wonderfully creamy risotto – my kids also fondly call it “yellow rice”. It goes really well with some courgettes or mushrooms – and you have a perfectly colourful autumn dish.
So, preheat the oven and get started:

Serves 4-6

1 butternut
1 big leek
1 small onion
1 clove of garlic
2 apples
2 Tbsp vegetable stock
1 pod of cardamom 
1 tsp apple cider vinegar 
Salt
Pepper
3 Tbsp nutritional yeast 
coconut oil (mild)  

500g wholegrain risotto rice or short grain rice  

Mushrooms, courgettes, rocket, shelled hemp seed for garnish 

Cook the rice, approximately 10 minutes shorter than instructed.
While it’s cooking, peel the butternut and cut all vegetables into small pieces. Melt some mild coconut oil on a large baking tray, mix in all of the vegetables, add salt and pepper and bake for about 40 minutes at 180°.

When the vegetables are nicely roasted, add about 2/3 to your blender with water (slightly less than vegetables), apple cider vinegar, cardmom and vegetbale stock. Mix thoroughly and season with salt and pepper to taste.
Add the soup and the rest of the vegetables to your rice and let simmer for about 10 more minutes – until the rice is nice and soft. Season with nutritional yeast, salt and pepper.
Now you can quick-fry some courgettes or mushrooms and serve with rocket and shelled hemp seed. Enjoy your perfect autumn dish!
