Roher Karottenkuchen mit köstlichem Frosting | Raw Carrot Cake with a delicious frosting

Wenn’s mal richtig schnell gehen soll, hab ich hier was für euch:
Neulich hatten wir Besuch von lieben Freunden aus Griechenland und wollten eine Fahrradtour machen. Während 3 Kinder und 3 Erwachsene sich in Schichten in unserem 2qm Bad ausgehfertig machten, schlich ich mich heimlich in die Küche, um noch ein kleines Picknick vorzubereiten.
Da ich auch Lust auf was Süßes, aber nicht sonderlich viele Zutaten im Haus hatte, wurde kurzerhand dieser tolle Karotten-Kuchen improvisiert. Mit großem Erfolg. Er war das Highlight des Picknicks und wurde direkt aus der Form verspeist. Besonders um das köstliche Cahsew-Frosting gab es den einen oder anderen Löffelkampf!
Am einfachsten geht alles mit einer Küchenmaschine, aber mit Mixer und Handreibe bekommt ihr es auch hin.
Für eine 20cm Springform nehmt Ihr:
Boden / Teig:
3-4 Karotten, geschält
1 Tasse Haferflocken
1 Tasse Kokosraspeln
1 Tasse Datteln
1/2 TL Zimt
1 Messerspitze Muskat
1 Messerspitze Ingwerpulver

Frosting:
1 Tasse aktivierte Cashews
1/2 Tasse Kokosöl, geschmolzen
2 EL Kokosblütennektar
Saft einer kleinen Zitrone
1/2 TL Vanille

Häckselt zuerst die Möhrchen in der KM In große Streifen (Wenn Ihr keine KM habt, geht natürlich auch eine Handreibe). Anschließend die restlichen Zutaten hinzugeben und mit dem S-Messer zu einem Teig vermixen. Lasst es nicht zu lange mixen, damit Ihr kein Püree, sondern einen strukturierten Teig bekommt.
Ein kleiner Schluck Wasser kann Wunder wirken, sollte es nicht klebrig genug sein (kommt ein bisschen auf Eure Datteln an). Teig in die Springfrom geben und in den Kühlschrank stellen, bis das Frosting fertig ist.
Für das Frosting habt Ihr die Cashews idealerwiese 2 Stunden eingeweicht. Wenn es aber richtig schnell gehen muss, gehen auch trockene. Falls Euer Mixer nicht der allerstärkste ist, habt Ihr im schlimmsten Fall ein paar Cashewstücke im Frosting. Doch das ist zu verschmerzen 😉
Gebt einfach alle Zutaten in einen Mixer (Personal Blender tut es auch) und mixt bis eine glatte Masse entstanden ist.
Frosting auf dem Teig verteilen und im Kühlschrank (oder wenns ganz schnell gehen soll, im Tiefkühler) fest werden lassen.
Löffel bereitlegen und genießen!


Raw carrot cake

Need a really quick and simple cake recipe? This raw carrot cake may be just what you’ve been looking for.
A few weeks ago we had friends over from Greece and wanted to go on a little bike tour with them. While 3 adults and 3 kids took shifts to get ready in our tiny bathroom, I sneaked into the kitchen to prepare a little picnic. I was in the mood for something sweet to take with us, but there weren’t too many ingredients around. So I went into improvisation mode and came up with this super simple and really delicious carrot cake! It was a hit with everyone, was eaten straight out of the cake tin. And especially the cashew frosting led to several spoon fights!
It works best with a food processor, but your blender will get the job done, too!
For a 7″ (20cm) cake tin you need:

Dough:
3-4 carrots, peeled 
1 cup rolled oats 
1 cup desiccated coconut
1 cup pitted dates 
1 tsp cinnamon
dash of nutmeg  
dash of ground ginger

Frosting:
1 cup activated cashews   
1/2 cup coconut oil, melted  
2 Tbsp coconut nectar 
Juice of a small lemon 
1/2 tsp vanilla

Dough:

First of all grate the carrots using your food processor, or by hand. Now add the remaining ingredients for the dough and mix using the s-blade. Don’t overdo it, so you don’t end up with puree, but a structured dough.
A tiny bit of water can work wonders if you need it to get more sticky (all comes down to the dates you’re using).
Add your dough to the cake tin and put into fridge until frosting is done.

Frosting: Ideally you have soaked the cashews for 2 hours or more. But if you need to be really quick, dried ones work, too. If your blender isn’t quite as stong the worst thing that can happen is some cashew pieces in the frosting. But that’s a risk worth taking 😉
So simply add all the ingredients to you blender (NutriBullet is fine) and mix until smooth.
Now add the frosting to your cake and pop back into the fridge (or freezer, if you’re in a real hurry) until it has turned solid.

    1. Hallo Kathrin, ich meine tatsächlich die Cups. Aber Du kannst eigentlich auch jede andere Tasse nehmen, da das Verhältnis ja immer gleich bleibt. Also ganz je nachdem wieviel Kuchen Du haben willst 😉
