Linsennudeln in cremiger Tomatensoße | Lentil pasta in creamy tomato sauce

Es sieht aus wie der Klassiker. Es schmeckt mindestens genauso gut wie das Original.  Aber er ist soo viel gesünder als die weiße-Nudel-Variante!

Auf unserer Suche nach wertvollen und vor allem schmackhaften Nudelvarianten, sind wir auf eine neue Lösung gestoßen: Linsennudeln. Es gibt sie von unterschiedlichen Herstellern,  wir haben hier in England eine Sorte gefunden, die aus Linsen- und Reismehl besteht und somit auch gleich ein vollständiger Eiweißlieferant ist. Aber wenn diese Mischung in Deutschland nicht vefügbar ist, tun es auch 100% Linsennudeln.

Dieses Gericht gehört inzwischen zu einem der Klassiker in unserer Küche und erfreut sich Beliebtheit auf allen Seiten: Bei den Kindern, weil es Nudeln sind. Und bei mir, weil es unglaublich schnell geht und trotzdem nahrhaft ist.

Für 2-3 Personen braucht Ihr:

250 rote Linsennudeln
400g geschälte Tomaten/ Pizzatomaten
2 Handvoll Babyspinat
frischer schwarzer Pfeffer nach Geschmack
etwas mildes Kokosfett
500ml gefiltertes Wasser
1 große Zwiebel
1 große Zehe Knoblauch
1 EL Oregano
1 Handvoll Basilikumblätter
1 EL Salz

ein wenig Kombu

Erhitzt das Kokosfett in einem Topf und dünstet die Zwiebel darin an, bis sie glasig ist. Dann Knoblauch hinzupressen und mit Salz und Oregano kurz braten bis alles herrlich duftet. Anschließend mit Wasser und Tomaten ablöschen und die Nudeln,  Basilikum und Kombu (für die bessere Verdaubarkeit) hinzugeben. Ca. 10 Minuten kochen lassen (je nach Hersteller), bis die Nudeln gar sind. Die Tomaten werden durch die abgesonderte Stärke der Linsen zu einer wunderbar cremigen Soße.

Vor dem Genießen noch den Spinat unterheben, mit einigen Basilikumblättern und frischem schwarzen Pfeffer verfeinern.

Und das tollste an diesem Gericht? Ihr habt nur einen Topf, den Ihr abwaschen müsst! Und wahrscheinlich wird der so gut ausgeleckt sein, dass das kaum Mühe macht…

Ihr könnt dieses Grundgericht natürlich noch ganz nach Eurem Geschmack erweitern. Wir braten z.B. gern noch etwas Lieblingsgemüse dazu, und servieren das Ganze mit Ruccola und verschiedenen Sprossen oder Hanfsamen…


Lentil pasta in creamy tomato sauce

It looks like the original. It tastes at least as good as the original. But it is so much healthier than the white-pasta-version!

On our search for nourishing and most importantly tasty pasta alternatives, we have come across a new solution: lentil pasta. There are different brands out there, but we have found one that contains lentil and rice flour. Because of this combination theyhave the nicest texture of all the ones we’ve tried and are the prefect protein source, too!

So this dish has become a very frequent guest in our kitchen and is deeply loved by everyone: By the kids, because it’s pasta. And by me, because it’s super easy and fast to make and still very nourishing.

Serves 2-3:

250 red lentil pasta
400g chopped tomatos
2 handful baby leaf spinach 
freshly ground pepper 
mild coconut oil for frying
500ml filtered water
1 large red onion
1 large clove of garlic
1 Tbsp. dried oregano
1 handful fresh basil leaves
1 Tbsp. salt

a few pieces of Kombu (to improve digestion)

Heat up the coconut oil in a pot and fry onion until translucent. Then add minced garlicsalt and oregano and roast until it gets very fragrant.

Now add watertomatos then pasta and Kombu. Depending on your brand of pasta, cook for about 10 -15 minutes, until pasta is done. Stir occasionally. The starch of the lentils turns the tomatos into a wonderfully creamy sauce.

Just before everything is done, stir in spinach and season to taste with pepper and salt. Add some fresh basil on each plate when serving.

And the best thing about this dish? You only have one pot to clean! And it will probably have been licked so there’s not much for you to do at all…

Adjust this basic version to your taste. E.g. we like to fry some vegetables to go with it and serve all with ruccola, different sprouts or hemp seed …
