Seitdem mehr und mehr Menschen um mich herum von Blattgold wissen, werde ich regelmäßig mit Rezeptideen und -wünschen versorgt, wie:
“Mach doch mal einen gesunden veganen Blätterteig” (ich bin dran!) oder
“Das hier ist mein Lieblingsrezept, vielleicht kannst Du es veganisieren…”
Ich bin total dankbar für die wunderbare Inspiration und komm bei all den Ideen gar nicht so schnell hinterher, wie ich gern würde. Dieses Rezept hier geht auch auf eine dieser zahlreichen Inspirationen zurück.

Vor ein paar Wochen erzählte mir meine liebe Nachbarin recht zufällig von einer ihrer Lieblingsspeisen: Lauch mit weißen Bohnen, in ihrer Variante in Sahne gekocht und mit Parmesan überbacken… Die Kombination aus Lauch und Bohnen stellte ich mir sehr lecker vor, also macht ich mich an eine eigene Version. Und nach einigen (auch sehr köstlichen) Versuchen, mal als Risotto, mal zu Kartoffeln habe ich eine Variante gefunden, die ich unbedingt mit Euch teilen will. Ich habe aus den Grundzutaten eine Pasta-Soße entwickelt, die wir am liebsten mit Quinoa-Erbsen-Nudeln essen. Aber auch Linsennudeln oder Euren eigenen Lieblingsnudeln wird diese Soße sehr gefallen!

Durch selbstgemachte Hafermilch ist sie cremig, aber nicht mächtig, süßlich durch den Lauch, frisch durch Zucchini und einfach nur lecker und nahrhaft durch die weißen Bohnen…
Besonders in Kombination mit Quinoa-Nudeln ein super Eiweißlieferant, aber auch mit Dinkelnudeln wird es eine vollwertige Proteinladung, da Getreide und Bohnen sich ja hervorragend ergänzen. Schnell gemacht und super lecker!
Also, los geht’s

Für 2-3 Personen

2 große Stangen Lauch
1 Zehe Knoblauch
400g gekochte Mondbohnen
1 große Zucchini, gerieben
Salz, frischer Pfeffer
2 EL Hefeflocken
Ca 400 ml selbstgemachte Hafermilch
Mildes Kokosfett zum Braten

Deko:

Ruccola
Hanfsamen

Erhitzt das Kokosfett in einer großen Pfanne, schneidet den Lauch in Ringe und bratet ihn im heißen Fett gut an, dann 1 TL Salz und gepressten Knoblauch dazu geben. Wenn der Lauch schön gebräunt ist, gebt die Bohnen (ohne Wasser) und die Milchdazu. (Gekaufte Hafermilch funktioniert nicht, weil sie nicht eindickt. In dem Fall müsstet Ihr Hafersahne nehmen. Aber Hafermilch ist super schnell gemacht, günstiger und gesünder, weil ihr keine der Zusätze mit drin habt)
Nun lasst Ihr das ganze ein paar Minuten kochen, bis die Bohnen warm und die Milch eingedickt ist. Frischer Pfeffer und Hefeflocken können ebenfalls schon hinzu.
Kurz bevor Eure Soße fertig ist, gebt die Zucchiniraspeln dazu. So können sie durchwärmen, bleiben aber fast roh, was die Soße sehr frisch und natürlich auch nahrhafter macht. Ggf. nochmal mit Salz und Pfeffer abschmecken und Ihr seid fertig!
Nun gebt das ganze auf Eure Lieblingspasta, dekoriert noch mit Ruccola und Hanfsamen und ruft mich an: ich will mitessen!

 


Quinoa pasta with leek and butter beans

Ever since I’ve started Blattgold, more and more people come to me with great ideas and requests for new recipes, like:
“Why don’t you make a healthy vegan puff pastry” (I’m on it!) or
“This is my favourite recipe, maybe you can veganise ist…”
I’m so grateful for this amazing inspiration and with all these ideas I have no where near enough time to deal with them all as quickly as I would like to.

Anyway, this recipe here has derived from one of these inspiring conversations: a couple of weeks ago my dear neighbour told me about one of her favourite dishes. Leeks with butterbeans, in her version cooked in cream and then baked wih parmesan… I found the combination of leeks and beans very tempting, so I started coming up with my own versions. After a couple of (also very tasty) attempts (as a risotto or combined with potatoes) I came up with this recipe that I want to share with you today. I used the main ingredients and turned them into a pasta sauce, which we just love to combine with quinoa-pea pasta. But lentil pasta or your own favourite will also work really well with this!

It’s creamy, but not too rich due to homemade oat milk, the leeks give it a nice sweetness, courgettes add some freshness and the beans are just yummy and so nourishing … It’s a great source of protein, especially when combined with quinoa pasta. But even spelt pasta will make this a complete protein dish, as grains and beans are a perfect amino acid combination. It’s quick, easy and really delicious.
So, let’s go!

Serves 2-3

2 large leeks  
1 Clove of garlic
400g cooked butter beans
1 large courgette, grated
Salt, fresh black pepper
2 Tbsp. nutritional yeast
around 400 ml homemade oat milk
Mild coconut oil

for garnish

Rocket
Hemp seeds

Heat the coconut oil in a large pan, chop the leeks into rings and fry in the hot fat for a couple of minutes, always stiring well. Now add minced garlic and 1 tsp of salt. When the leeks is slightly golden, add the beans (without water) and the milk. (Ready bought oat milk won’t work, as it doesn’t thicken. So as a substitute you would have to buy oat cream. But making your own oat milk is so easy, cheaper and healthier as you don’t have any of the nasty additives …)
Let it all simmer for a bit until the beans are warm and the sauce has thickened, adding fresh pepper and yeast while you stir.
Just before the sauce is done, stir in the grated courgette. This way the grates will get warm but stay almost raw, adding freshness and of course more nutrients to the sauce. Season to taste with salt and pepper, add to your favorite pasta, garnish with rocket and hemp seeds and and then, call me: I’m hungry, too!

  1. Hallöchen- wirklich mega lecker und schnell!!! Ich habe allerdings gekaufte hafermilch genommen also nicht so eine sämige Soße bekommen, aber durch die Beigabe der Zucchini wird es eh cremiger. Hat mich also nicht gestört.
