Ist Sonntag wirklich schon der dritte Advent? Noch nie ist die Vorweihnachtszeit so schnell an mir vorbeigerast wie in diesem Jahr. Aber es ist ja auch die erste Adventszeit mit drei Kindern …  und dazu mit drei Adventskursen. Aprospos Kurse, einige der Leckereien, mit denen wir dort gezaubert haben, waren Nougat und Marzipan. Hell und Dunkel, Ying und Yang, die beiden gehören einfach zusammen.

Deshalb möchte ich Euch zeigen, wie Ihr diese beiden Klassiker der Weihnachtsbäckerei ganz leicht selber herstellen könnt. Im Handel findet man keine zuckerfreien Varianten, aber es ist wirklich schnell gemacht und lässt sich gut aufbewahren – und dann wahlweise kombinieren oder in andere Köstlichkeiten verwandeln.

Also, stellt Euch schnell noch einen kleinen Vorrat her, dann steht dem zuckerfreien Glück am Sonntag nichts mehr im Wege.

Nougat

200g aktivierte geröstete Haselnüsse (geröstet kaufen oder selbst kurz in der Pfanne anrösten)

200g weiche/frische Datteln (ich mag am liebsten diese, man bekommt sie beim türkischen Supermarkt)
1 Messerspitze Vanille
1 TL Kakao

Gebt die Nüsse in Eure Küchenmaschine (oder Mixer) und verarbeitet sie zu Pulver. Nun gebt Ihr die (entsteinten!) Datteln, Vanille und Kakao hinzu und mixt es solange, bis eine homogene Masse entsteht. In der Küchenmaschine formt sich dann so eine Art „Ball“ – das war’s schon! Jetzt nur nicht gleich alles aufessen …

Marzipan

250g aktivierte geschälte Mandeln (wenn Ihr ungeschälte habt: über Nacht einweichen, dann könnt Ihr sie leicht schälen)
2 EL Kokosblütennektar
8 Tropfen natürliches Bittermandelaroma (dieses hier ist sehr gut und hält ewig)

etwas Wasser

Gebt wieder zuerst die Nüsse in die Küchenmaschine, bis sie ein feines Mehl ergeben. Nun Kokosblütennektar und Aroma und nach und nach wenig (!) Wasser hinzugeben, bis eine schöne klebrige Masse entsteht.

Gekauftes Marzipan enthält maximal 50% Mandeln. Das ist hier anders. Und das schmeckt man natürlich auch. Will sagen: So wie hier beschrieben, ist die Masse nicht sonderlich süß. Ich mag das so und auch in den Kursen fanden es viele ausreichend gesüßt, besonders, wenn man es mit dem Nougat kombiniert. Wenn Ihr es allerdings süßer möchtet, gebt einfach noch ein wenig Kokosblütennektar hinzu, bis Ihr glücklich seid!

Ganz ähnlich mit dem Bittermandelaroma: Erst durch dieses kleine Zauberwasser schmeckt Marzipan nach Marzipan … Ihr könnt den Geschmak intensivieren, indem Ihr einfach noch tröfchenweise mehr dazu gebt. Aber seid sparsam und probiert lieber immer wieder, denn das Aroma ist wirklich intensiv.

Eure Rohmassen sind nun fertig. Ihr könnt sie direkt verarbeiten oder auch wochenlang im Kühlschrank aufbewahren. Kombiniert die beiden als Nougat-Marzipan-Brot, bastelt Marzipankartoffeln (einfach in ein wenig Kakao wälzen) oder esst sie pur … Eurer Phantasie sind keine Grenzen gesetzt.

Nougat and marzipan – vegan and sugarfree

Is it really only 9 days till Christmas? December has never passed this quickly, but then again it’s my first one with three kids … and three Christmas classes for that matter. Aprospos classes, some of the treats we were experimenting with, were nougat and marzipan. Fair and dark, ying and yang, these two simply belong together.

Today I want to show you how to easily make these Christmas classics yourself. There are no shop-bought sugarfree versions, but they are super quick to make and keep really well in the fridge. Stock them and get creative whenever you feel like it!

Nougat

200g activated roasted hazelnuts (buy roasted or briefly roast them yourself in a pan)
200g soft / fresh dates (I prefer ones that look like these)
1 dash of vanilla
1 tsp cacao

Place the nuts in your food processor (or blender) and turn into powder. Now add the (pitted!) dates, vanila and cacao and blend until smooth and sticky. If the dough turns into a „ball“ it’s done! Now, don’t eat it all at once …

Marzipan

250g peeled almonds (if you have unpeeled ones: soak them overnight, then you can easily peel them)
2 Tbsps coconut nectar
8 drops natural bitter almond aroma (this is great and lasts ages)

a little water

First of all place the nuts in your food processor and turn into finely ground flour. Now add nectar and aroma and bit by bit a little (!) water, until you get a nice and sticky dough.

Shop-bought marzipan contains 50% almonds tops. This one is different. You will be able to tell, which means: it is not very sweet. I like it this way and many people in my classes felt the same, especially when combining it with the nougat. However, if you want it sweeter, just add more nectar, keep going until you are happy!
Same with the almond aroma: It’s this little magic potion that turns pure almond paste into marzipan and gives it that special something … you can intensify the taste by adding more drops of the aroma. But be careful and keep tasting, as it is really intesive.

Your two basics are done now. You can work with them right away of keep them in the fridge for weeks. Combine them, turn them into balls or eat them straight … get creative and enjoy!
